A childhood favourite that is just soo hard to find! Pandan leaves are commonly used in Malay cooking to infuse food with flavour and fragrance. You could always smell dinner on the stove as grandma used knotted pandan leaves in rice, stews and desserts. My favourite recipe is pandan wrapped chicken. The chicken would be seasoned as per normal then wrapped in a pandan leaf to form a knot. Deep-fried, the leaves get burnt to a crisp and break apart, leaving you with juicy frangrant chicken.
